Steamed Perch with Ginseng and Kidney Bean

Ingredients:
1 perch (cleaned and gutted)
5g sliced American ginseng
10g kidney bean
2 sections scallion
10 slices ginger
Salt and cooking wine to taste
Instructions:
Clean the perch, remove bones and head, score lightly, and place on a plate.
Boil ginseng slices for 15 minutes and kidney bean for 1 hour, then set aside. (Save the water used to boil American ginseng.)
Top the fish with scallion, ginger, cooked ginseng, and kidney bean.
Season with salt, cooking wine and ginseng water.
Steam for 15 minutes.
Carefully remove the plate from the wok, let cool for a few minutes before serving.
