Braised Chicken with American Ginseng

Ingredients:
500g chicken pieces
5 slices American ginseng
5 slices ginger
2 sections scallion
1 star anise
Cooking wine, soy sauce, and a pinch of salt
Instructions:
Cut the chicken into small pieces and blanch briefly. Rinse and drain.
Heat oil, add scallion, ginger, and star anise. Stir-fry until fragrant, then add the chicken and cook until lightly browned.
Add cooking wine and soy sauce, pour in enough hot water to cover, and simmer for 30 minutes.
Add ginseng slices and salt, then reduce heat. Simmer for another 45 minutes until the sauce thickens.
